Brown Rice Bowl with Korean Ground Beef, Kimchi, and Gochujang Dressing

Ingredients
- •2 cups cooked brown rice
- •1 lb ground beef
- •3 cloves garlic, minced
- •2 tablespoons soy sauce
- •1 tablespoon sesame oil
- •1 teaspoon brown sugar
- •1 cup kimchi, chopped
- •3 tablespoons gochujang paste
- •2 tablespoons rice vinegar
- •2 tablespoons water
- •2 green onions, sliced
- •1 teaspoon sesame seeds
Directions
- 1Heat 1 tablespoon sesame oil in a large skillet over medium-high heat. Add ground beef and cook until browned, breaking it apart with a spoon, about 5-7 minutes. Drain excess fat if needed.
- 2Add minced garlic to the beef and cook for 1 minute until fragrant. Stir in soy sauce and brown sugar, cooking for another minute.
- 3In a small bowl, whisk together gochujang paste, rice vinegar, water, and remaining sesame oil to make the dressing.
- 4Divide cooked brown rice among four bowls.
- 5Top each bowl with seasoned ground beef, chopped kimchi, and a drizzle of gochujang dressing.
- 6Garnish with green onions and sesame seeds, then serve immediately.
