Bubur Ayam (Indonesian Chicken Rice Porridge)

Rice cooked down in chicken broth until it collapses, then loaded with shredded chicken, sweet soy and fried shallots.

Ingredients

  • 250 g jasmine rice
  • 1 litre chicken broth
  • 300 g chicken breast, cooked and shredded
  • 3 green onions, sliced
  • 2 tbsp fried shallots
  • 2 tbsp sweet soy sauce
  • 1 tbsp soy sauce

Directions

  1. 1Rinse the rice until the water runs clear.
  2. 2Put it in a heavy pot with the chicken broth and bring to a boil.
  3. 3Lower the heat and cook forty-five minutes, stirring often, until the grains break down completely.
  4. 4Add hot water whenever it thickens past a pourable porridge; it will want more than you expect.
  5. 5Season with the soy sauce and check the salt.
  6. 6Ladle into bowls and top with chicken, green onion, fried shallots and a drizzle of sweet soy sauce.

💡 Stir often and keep it loose. Bubur thickens dramatically as it sits, so make it looser than you want to eat it.
