Bubur Ayam (Indonesian Chicken Rice Porridge)
Rice cooked down in chicken broth until it collapses, then loaded with shredded chicken, sweet soy and fried shallots.

Ingredients
- •250 g jasmine rice
- •1 litre chicken broth
- •300 g chicken breast, cooked and shredded
- •3 green onions, sliced
- •2 tbsp fried shallots
- •2 tbsp sweet soy sauce
- •1 tbsp soy sauce
Directions
- 1Rinse the rice until the water runs clear.
- 2Put it in a heavy pot with the chicken broth and bring to a boil.
- 3Lower the heat and cook forty-five minutes, stirring often, until the grains break down completely.
- 4Add hot water whenever it thickens past a pourable porridge; it will want more than you expect.
- 5Season with the soy sauce and check the salt.
- 6Ladle into bowls and top with chicken, green onion, fried shallots and a drizzle of sweet soy sauce.
💡 Stir often and keep it loose. Bubur thickens dramatically as it sits, so make it looser than you want to eat it.
