Buckwheat Pancakes

- •1 cup buckwheat flour
- •1/2 cup all-purpose flour

- •2 eggs
- •1 3/4 cups milk

Directions
- 1In a large bowl, whisk together buckwheat flour, all-purpose flour, sugar, baking powder, and salt.
- 2In another bowl, beat eggs and mix in milk, melted butter, and vanilla extract.
- 3Pour wet ingredients into dry ingredients and stir until just combined; some lumps are okay.
- 4Heat a buttered griddle or skillet over medium heat until a drop of water sizzles.
- 5Pour 1/4 cup batter for each pancake and cook until bubbles form on top, about 2-3 minutes.
- 6Flip and cook the other side until golden brown, about 1-2 minutes.
- 7Serve warm with maple syrup, berries, or your favorite toppings.
