Ingredients
- •8 slices day-old bread
- •4 eggs
- •3/4 tsp salt
- •1/4 tsp black pepper
- •1/3 cup vegetable oil
- •2 tbsp fresh chives, chopped
Directions
- 1Beat the eggs with salt and black pepper in a wide shallow bowl.
- 2Heat a thin layer of vegetable oil in a large skillet over medium heat.
- 3Dip each bread slice in the beaten egg, turning once so both sides are coated.
- 4Fry the coated bread for 2–3 minutes per side until crisp and deeply golden.
- 5Drain briefly on paper towel and season lightly with a pinch of salt.
- 6Scatter with chives and serve hot.
💡 Use day-old bread rather than very fresh bread; it absorbs the egg without tearing apart in the skillet.
