Ingredients

  • 8 slices day-old bread
  • 4 eggs
  • 3/4 tsp salt
  • 1/4 tsp black pepper
  • 1/3 cup vegetable oil
  • 2 tbsp fresh chives, chopped

Directions

  1. 1Beat the eggs with salt and black pepper in a wide shallow bowl.
  2. 2Heat a thin layer of vegetable oil in a large skillet over medium heat.
  3. 3Dip each bread slice in the beaten egg, turning once so both sides are coated.
  4. 4Fry the coated bread for 2–3 minutes per side until crisp and deeply golden.
  5. 5Drain briefly on paper towel and season lightly with a pinch of salt.
  6. 6Scatter with chives and serve hot.

💡 Use day-old bread rather than very fresh bread; it absorbs the egg without tearing apart in the skillet.
