Polish beet and horseradish salad with a sweet-sour edge, served cold alongside meats or as a sharp lunchbox side.

Ingredients

  • 1 1/2 lb beets, scrubbed
  • 2 tbsp prepared horseradish
  • 1 1/2 tbsp apple cider vinegar
  • 1 tsp granulated sugar
  • 1/2 tsp salt
  • 1/4 tsp black pepper

Directions

  1. 1Place beets in a saucepan, cover with water, and simmer 30–35 minutes until a knife slides into the centers.
  2. 2Drain and cool until comfortable to handle, then rub off the skins and grate the beets coarsely.
  3. 3Stir prepared horseradish, apple cider vinegar, sugar, salt, and black pepper together in a bowl.
  4. 4Fold in the grated beets until evenly seasoned.
  5. 5Chill at least 10 minutes before serving so the horseradish flavor settles into the beets.

💡 Mix the horseradish into cooled beets; excessive heat drives off the sharp aromatic compounds and leaves the salad much milder.
