Buraczki z Chrzanem
Polish beet and horseradish salad with a sweet-sour edge, served cold alongside meats or as a sharp lunchbox side.

Ingredients
- •1 1/2 lb beets, scrubbed
- •2 tbsp prepared horseradish
- •1 1/2 tbsp apple cider vinegar
- •1 tsp granulated sugar
- •1/2 tsp salt
- •1/4 tsp black pepper
Directions
- 1Place beets in a saucepan, cover with water, and simmer 30–35 minutes until a knife slides into the centers.
- 2Drain and cool until comfortable to handle, then rub off the skins and grate the beets coarsely.
- 3Stir prepared horseradish, apple cider vinegar, sugar, salt, and black pepper together in a bowl.
- 4Fold in the grated beets until evenly seasoned.
- 5Chill at least 10 minutes before serving so the horseradish flavor settles into the beets.
💡 Mix the horseradish into cooled beets; excessive heat drives off the sharp aromatic compounds and leaves the salad much milder.
