Burrito Bowl

Ingredients
- •2 cups cooked rice
- •2 tablespoons olive oil
- •1 pound ground beef
- •2 teaspoons chili powder
- •1 teaspoon cumin
- •1 can (15 oz) black beans, drained
- •1 cup corn kernels
- •2 avocados, sliced
- •1 cup shredded cheddar cheese
- •1 cup diced tomatoes
- •½ cup sour cream
- •to taste salt and pepper
Directions
- 1Heat olive oil in a large skillet over medium-high heat and cook ground beef until browned, breaking it into crumbles.
- 2Add chili powder and cumin to the beef, stirring well, then mix in black beans and corn. Simmer for 3-4 minutes.
- 3Divide cooked rice evenly among 4 bowls as the base.
- 4Top each bowl with the beef and bean mixture, then add avocado slices, diced tomatoes, and shredded cheese.
- 5Finish with a dollop of sour cream and season with salt and pepper to taste.
