Burrito Bowl

A deconstructed burrito loaded with seasoned rice, beans, fresh toppings, and creamy avocado.

Ingredients

  • 2 cups cooked rice
  • 2 tablespoons olive oil
  • 1 pound ground beef
  • 2 teaspoons chili powder
  • 1 teaspoon cumin
  • 1 can (15 oz) black beans, drained
  • 1 cup corn kernels
  • 2 avocados, sliced
  • 1 cup shredded cheddar cheese
  • 1 cup diced tomatoes
  • ½ cup sour cream
  • to taste salt and pepper

Directions

  1. 1Heat olive oil in a large skillet over medium-high heat and cook ground beef until browned, breaking it into crumbles.
  2. 2Add chili powder and cumin to the beef, stirring well, then mix in black beans and corn. Simmer for 3-4 minutes.
  3. 3Divide cooked rice evenly among 4 bowls as the base.
  4. 4Top each bowl with the beef and bean mixture, then add avocado slices, diced tomatoes, and shredded cheese.
  5. 5Finish with a dollop of sour cream and season with salt and pepper to taste.
