Ingredients
- •1.5 lbs catfish fillets, cut into 2-inch pieces
- •3 tablespoons fish sauce
- •2 tablespoons sugar
- •6 cloves garlic, minced
- •2 red chilies, sliced
- •1 tablespoon vegetable oil
- •1 cup water
- •4 shallots, thinly sliced
- •1 teaspoon black pepper
- •2 scallions, cut into 2-inch pieces
Directions
- 1Heat oil in a clay pot or heavy-bottomed pan over medium heat, then add minced garlic and sliced chilies, stirring for 1 minute until fragrant.
- 2Add sugar and stir constantly for 2-3 minutes until it caramelizes to a golden brown color.
- 3Add catfish pieces and stir gently to coat with the caramelized mixture for 2 minutes.
- 4Pour in fish sauce and water, then add shallots and black pepper, stirring gently to combine.
- 5Bring to a simmer, cover, and cook for 15-20 minutes until the catfish is tender and the sauce has thickened.
- 6Taste and adjust seasoning with additional fish sauce if needed.
- 7Garnish with scallions and serve hot directly in the clay pot with steamed rice.
