Cajun Chicken and Sausage Skillet

Ingredients
- •2 tablespoons olive oil
- •1 pound chicken breast, cubed
- •12 ounces andouille sausage, sliced
- •1 medium onion, diced
- •1 medium red bell pepper, diced
- •3 cloves garlic, minced
- •1 can (14.5 oz) diced tomatoes
- •1 cup chicken broth
- •2 teaspoons Cajun seasoning
- •1 teaspoon paprika
- •1/2 teaspoon cayenne pepper
- •to taste salt and black pepper
Directions
- 1Heat olive oil in a large skillet over medium-high heat and cook the chicken cubes until golden, about 5-7 minutes, then transfer to a plate.
- 2Add sausage slices to the skillet and brown for 3-4 minutes, then set aside with the chicken.
- 3Sauté diced onion and bell pepper in the same skillet until softened, about 4 minutes, then add minced garlic and cook for 1 minute.
- 4Stir in Cajun seasoning, paprika, and cayenne pepper, cooking for 30 seconds until fragrant.
- 5Pour in diced tomatoes with juice and chicken broth, scraping up any browned bits from the bottom.
- 6Return the chicken and sausage to the skillet and bring to a simmer.
- 7Reduce heat to medium-low and simmer uncovered for 15-20 minutes until the sauce thickens and flavors meld, stirring occasionally.
- 8Season with salt and black pepper to taste and serve hot over rice or with crusty bread.
