Cajun Chicken and Sausage Skillet

Ingredients

  • 2 tablespoons olive oil
  • 1 pound chicken breast, cubed
  • 12 ounces andouille sausage, sliced
  • 1 medium onion, diced
  • 1 medium red bell pepper, diced
  • 3 cloves garlic, minced
  • 1 can (14.5 oz) diced tomatoes
  • 1 cup chicken broth
  • 2 teaspoons Cajun seasoning
  • 1 teaspoon paprika
  • 1/2 teaspoon cayenne pepper
  • to taste salt and black pepper

Directions

  1. 1Heat olive oil in a large skillet over medium-high heat and cook the chicken cubes until golden, about 5-7 minutes, then transfer to a plate.
  2. 2Add sausage slices to the skillet and brown for 3-4 minutes, then set aside with the chicken.
  3. 3Sauté diced onion and bell pepper in the same skillet until softened, about 4 minutes, then add minced garlic and cook for 1 minute.
  4. 4Stir in Cajun seasoning, paprika, and cayenne pepper, cooking for 30 seconds until fragrant.
  5. 5Pour in diced tomatoes with juice and chicken broth, scraping up any browned bits from the bottom.
  6. 6Return the chicken and sausage to the skillet and bring to a simmer.
  7. 7Reduce heat to medium-low and simmer uncovered for 15-20 minutes until the sauce thickens and flavors meld, stirring occasionally.
  8. 8Season with salt and black pepper to taste and serve hot over rice or with crusty bread.
