Calabresa Acebolada (Brazilian Sausage with Onions)
Smoked calabresa sausage browned hard and buried in slowly softened onions. Four ingredients, thirty minutes.

Ingredients
- •500 g calabresa sausage, sliced
- •2 large onions, sliced
- •1 tbsp neutral oil
- •2 tbsp parsley, chopped
Directions
- 1Slice the sausage on the diagonal into thick coins.
- 2Put them in a wide pan with the oil over medium-high heat.
- 3Fry eight minutes until browned on both sides and a good amount of red fat has rendered out.
- 4Add the sliced onions and stir them through the rendered fat.
- 5Cook ten minutes until the onions are soft, golden and coated in the sausage fat.
- 6Scatter the parsley over and serve with rice or in bread.
💡 Do not drain the rendered fat. Cooking the onions in it is the entire dish, and without it they taste of nothing much.
