Calabresa Acebolada (Brazilian Sausage with Onions)

Smoked calabresa sausage browned hard and buried in slowly softened onions. Four ingredients, thirty minutes.

Ingredients

  • 500 g calabresa sausage, sliced
  • 2 large onions, sliced
  • 1 tbsp neutral oil
  • 2 tbsp parsley, chopped

Directions

  1. 1Slice the sausage on the diagonal into thick coins.
  2. 2Put them in a wide pan with the oil over medium-high heat.
  3. 3Fry eight minutes until browned on both sides and a good amount of red fat has rendered out.
  4. 4Add the sliced onions and stir them through the rendered fat.
  5. 5Cook ten minutes until the onions are soft, golden and coated in the sausage fat.
  6. 6Scatter the parsley over and serve with rice or in bread.

💡 Do not drain the rendered fat. Cooking the onions in it is the entire dish, and without it they taste of nothing much.
