Caldo de Camarón

Ingredients
- •2 tablespoons olive oil
- •1 medium onion, diced
- •4 cloves garlic, minced
- •2 medium tomatoes, diced
- •6 cups chicken or seafood broth
- •2 medium potatoes, cubed
- •1 carrot, sliced
- •1 pound large shrimp, peeled and deveined
- •1 teaspoon cumin
- •1 bay leaf
- •to taste salt and pepper
- •for garnish fresh cilantro
Directions
- 1Heat olive oil in a large pot over medium heat and sauté diced onion until softened, about 3 minutes.
- 2Add minced garlic and cook for 1 minute until fragrant.
- 3Stir in diced tomatoes and cook for 3-4 minutes, breaking them down slightly.
- 4Pour in the broth and bring to a boil, then add potatoes, carrots, cumin, and bay leaf.
- 5Reduce heat and simmer for 15-20 minutes until potatoes are tender.
- 6Add shrimp to the pot and cook for 4-5 minutes until they turn pink and opaque.
- 7Season with salt and pepper to taste, remove bay leaf, and serve hot garnished with fresh cilantro.
