Caldo de Camarón

Ingredients

  • 2 tablespoons olive oil
  • 1 medium onion, diced
  • 4 cloves garlic, minced
  • 2 medium tomatoes, diced
  • 6 cups chicken or seafood broth
  • 2 medium potatoes, cubed
  • 1 carrot, sliced
  • 1 pound large shrimp, peeled and deveined
  • 1 teaspoon cumin
  • 1 bay leaf
  • to taste salt and pepper
  • for garnish fresh cilantro

Directions

  1. 1Heat olive oil in a large pot over medium heat and sauté diced onion until softened, about 3 minutes.
  2. 2Add minced garlic and cook for 1 minute until fragrant.
  3. 3Stir in diced tomatoes and cook for 3-4 minutes, breaking them down slightly.
  4. 4Pour in the broth and bring to a boil, then add potatoes, carrots, cumin, and bay leaf.
  5. 5Reduce heat and simmer for 15-20 minutes until potatoes are tender.
  6. 6Add shrimp to the pot and cook for 4-5 minutes until they turn pink and opaque.
  7. 7Season with salt and pepper to taste, remove bay leaf, and serve hot garnished with fresh cilantro.
