Caldo de Costilla

Ingredients
- •2 lbs beef ribs
- •8 cups water
- •1 large onion, quartered
- •4 cloves garlic, minced
- •3 medium potatoes, cubed
- •2 large carrots, cut into chunks
- •1 cup diced cabbage
- •2 corn on the cob, halved
- •1 tablespoon salt
- •1 teaspoon black pepper
- •2 limes, halved
Directions
- 1Place beef ribs in a large pot with 8 cups of water and bring to a boil, then reduce heat and simmer for 10 minutes, skimming off any foam that rises to the surface.
- 2Add quartered onion, minced garlic, salt, and pepper, then simmer for 30 minutes until the meat is tender.
- 3Add potatoes, carrots, and corn, simmering for 15 minutes until vegetables begin to soften.
- 4Stir in the diced cabbage and simmer for another 10 minutes until all vegetables are tender.
- 5Taste and adjust seasonings as needed, then serve hot in deep bowls with fresh lime wedges on the side for squeezing.
