Ingredients

  • 2 lbs beef ribs
  • 8 cups water
  • 1 large onion, quartered
  • 4 cloves garlic, minced
  • 3 medium potatoes, cubed
  • 2 large carrots, cut into chunks
  • 1 cup diced cabbage
  • 2 corn on the cob, halved
  • 1 tablespoon salt
  • 1 teaspoon black pepper
  • 2 limes, halved

Directions

  1. 1Place beef ribs in a large pot with 8 cups of water and bring to a boil, then reduce heat and simmer for 10 minutes, skimming off any foam that rises to the surface.
  2. 2Add quartered onion, minced garlic, salt, and pepper, then simmer for 30 minutes until the meat is tender.
  3. 3Add potatoes, carrots, and corn, simmering for 15 minutes until vegetables begin to soften.
  4. 4Stir in the diced cabbage and simmer for another 10 minutes until all vegetables are tender.
  5. 5Taste and adjust seasonings as needed, then serve hot in deep bowls with fresh lime wedges on the side for squeezing.
