Caldo de Pollo

Ingredients
- •2 lbs chicken breasts or thighs, cut into chunks
- •10 cups chicken broth
- •1 cup long-grain white rice
- •3 medium potatoes, peeled and cubed
- •2 medium carrots, sliced
- •1 medium onion, diced
- •3 cloves garlic, minced
- •1 cup corn kernels, fresh or frozen
- •2 tablespoons olive oil
- •1 teaspoon cumin
- •to taste Salt and pepper
- •¼ cup fresh cilantro, chopped
Directions
- 1Heat olive oil in a large pot over medium-high heat. Add onion and garlic, sauté for 2-3 minutes until fragrant.
- 2Add chicken pieces and cook for 5 minutes until lightly browned on the outside.
- 3Pour in chicken broth and bring to a boil. Add potatoes, carrots, cumin, salt, and pepper. Reduce heat and simmer for 15 minutes.
- 4Stir in rice and corn, and continue simmering for 15-20 minutes until rice is tender and chicken is fully cooked.
- 5Taste and adjust seasoning as needed. Serve hot, garnished with fresh cilantro and lime wedges on the side.
