Ingredients

  • 2 bitter melons, sliced into rings and seeds removed
  • 200g pork shoulder, thinly sliced
  • 150g shrimp, peeled and deveined
  • 1 liter chicken or pork broth
  • 2 shallots, thinly sliced
  • 3 cloves garlic, minced
  • 1 tablespoon fish sauce
  • 1 teaspoon sugar
  • 2 dried shiitake mushrooms, soaked and sliced
  • 3 sprigs fresh cilantro
  • 1 teaspoon salt
  • Black pepper to taste black pepper

Directions

  1. 1Bring the broth to a boil in a large pot over high heat.
  2. 2Add shallots and garlic, sauté for 1-2 minutes until fragrant.
  3. 3Add pork slices and stir to cook through, about 3-4 minutes.
  4. 4Add bitter melon rings and soaked mushrooms, simmer for 8-10 minutes.
  5. 5Add shrimp and cook until pink, about 3-4 minutes.
  6. 6Season with fish sauce, sugar, and salt; adjust to taste.
  7. 7Transfer to a serving bowl, garnish with fresh cilantro and black pepper.
  8. 8Serve hot with steamed rice.
