Cannelloni alla Ricotta
Tender pasta tubes filled with creamy ricotta and spinach, baked in rich tomato sauce and melted cheese.

Ingredients
- •12 cannelloni pasta tubes
- •15 oz ricotta cheese
- •10 oz frozen spinach, thawed and drained
- •1 cup mozzarella cheese, shredded
- •1/2 cup Parmesan cheese, grated
- •1 egg
- •24 oz marinara sauce
- •2 cloves garlic, minced
- •1/2 teaspoon salt
- •1/4 teaspoon black pepper
- •1/4 teaspoon nutmeg
Directions
- 1Preheat oven to 375°F. Cook cannelloni according to package directions, then drain and lay flat on a clean kitchen towel.
- 2Mix ricotta, spinach, mozzarella, Parmesan, egg, garlic, salt, pepper, and nutmeg in a bowl until well combined.
- 3Spread a thin layer of marinara sauce on the bottom of a 9x13 inch baking dish.
- 4Using a piping bag or spoon, fill each cannelloni tube with the ricotta mixture and arrange seam-side down in the dish.
- 5Pour remaining marinara sauce over the cannelloni, then sprinkle extra mozzarella and Parmesan on top.
- 6Cover with foil and bake for 25 minutes, then remove foil and bake for an additional 10 minutes until cheese is golden and bubbly.
- 7Let rest for 5 minutes before serving.
