Cannelloni alla Ricotta

Ingredients

  • 12 cannelloni pasta tubes
  • 15 oz ricotta cheese
  • 10 oz frozen spinach, thawed and drained
  • 1 cup mozzarella cheese, shredded
  • 1/2 cup Parmesan cheese, grated
  • 1 egg
  • 24 oz marinara sauce
  • 2 cloves garlic, minced
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon nutmeg

Directions

  1. 1Preheat oven to 375°F. Cook cannelloni according to package directions, then drain and lay flat on a clean kitchen towel.
  2. 2Mix ricotta, spinach, mozzarella, Parmesan, egg, garlic, salt, pepper, and nutmeg in a bowl until well combined.
  3. 3Spread a thin layer of marinara sauce on the bottom of a 9x13 inch baking dish.
  4. 4Using a piping bag or spoon, fill each cannelloni tube with the ricotta mixture and arrange seam-side down in the dish.
  5. 5Pour remaining marinara sauce over the cannelloni, then sprinkle extra mozzarella and Parmesan on top.
  6. 6Cover with foil and bake for 25 minutes, then remove foil and bake for an additional 10 minutes until cheese is golden and bubbly.
  7. 7Let rest for 5 minutes before serving.
