Cannoli

Ingredients
- •2 cups all-purpose flour
- •1/4 cup granulated sugar
- •1/2 teaspoon salt
- •1/2 cup dry white wine
- •2 tablespoons melted butter
- •2 cups ricotta cheese
- •1 1/2 cups powdered sugar
- •1/2 cup mini chocolate chips
- •1 teaspoon vanilla extract
- •2 quarts vegetable oil for frying
Directions
- 1Mix flour, sugar, and salt in a bowl. Add wine and melted butter, stirring until dough forms. Knead for 5 minutes until smooth, then wrap and rest for 30 minutes.
- 2Roll dough thin on a floured surface and cut into 3-inch squares. Wrap each square diagonally around a cannoli form or metal tube.
- 3Heat oil to 375°F in a deep pot. Fry wrapped cannoli 1-2 minutes per side until golden and crispy. Drain on paper towels and cool completely.
- 4Beat ricotta with powdered sugar and vanilla until smooth and creamy. Fold in chocolate chips gently.
- 5Carefully slide cannoli shells off the forms. Using a piping bag, fill each shell with ricotta mixture from both ends.
- 6Dust filled cannoli with additional powdered sugar before serving. Best enjoyed fresh within a few hours.
