Crispy fried pastry tubes filled with sweet ricotta cream and chocolate chips, a classic Italian Sicilian treat.

Ingredients

  • 2 cups all-purpose flour
  • 1/4 cup granulated sugar
  • 1/2 teaspoon salt
  • 1/2 cup dry white wine
  • 2 tablespoons melted butter
  • 2 cups ricotta cheese
  • 1 1/2 cups powdered sugar
  • 1/2 cup mini chocolate chips
  • 1 teaspoon vanilla extract
  • 2 quarts vegetable oil for frying

Directions

  1. 1Mix flour, sugar, and salt in a bowl. Add wine and melted butter, stirring until dough forms. Knead for 5 minutes until smooth, then wrap and rest for 30 minutes.
  2. 2Roll dough thin on a floured surface and cut into 3-inch squares. Wrap each square diagonally around a cannoli form or metal tube.
  3. 3Heat oil to 375°F in a deep pot. Fry wrapped cannoli 1-2 minutes per side until golden and crispy. Drain on paper towels and cool completely.
  4. 4Beat ricotta with powdered sugar and vanilla until smooth and creamy. Fold in chocolate chips gently.
  5. 5Carefully slide cannoli shells off the forms. Using a piping bag, fill each shell with ricotta mixture from both ends.
  6. 6Dust filled cannoli with additional powdered sugar before serving. Best enjoyed fresh within a few hours.
