Carbonada

Ingredients

  • 2 lbs beef chuck, cubed
  • 3 tablespoons vegetable oil
  • 1 medium onion, diced
  • 4 cloves garlic, minced
  • 2 cans (14.5 oz each) diced tomatoes
  • 4 cups beef broth
  • 3 medium potatoes, cubed
  • 2 cups corn kernels
  • 1 medium bell pepper, diced
  • 1 teaspoon cumin
  • 1 teaspoon salt
  • ½ teaspoon black pepper

Directions

  1. 1Heat oil in a large pot over medium-high heat and brown the beef cubes on all sides, then remove and set aside.
  2. 2In the same pot, sauté onion and garlic until softened, about 3 minutes.
  3. 3Return beef to pot, add tomatoes, broth, cumin, salt, and pepper, then bring to a boil.
  4. 4Reduce heat and simmer covered for 45 minutes until beef is tender.
  5. 5Add potatoes and bell pepper, then simmer for 15 minutes.
  6. 6Stir in corn kernels and simmer for another 10 minutes until potatoes are tender.
  7. 7Taste and adjust seasonings, then serve hot in bowls.
