Carbonada

Ingredients
- •2 lbs beef chuck, cubed
- •3 tablespoons vegetable oil
- •1 medium onion, diced
- •4 cloves garlic, minced
- •2 cans (14.5 oz each) diced tomatoes
- •4 cups beef broth
- •3 medium potatoes, cubed
- •2 cups corn kernels
- •1 medium bell pepper, diced
- •1 teaspoon cumin
- •1 teaspoon salt
- •½ teaspoon black pepper
Directions
- 1Heat oil in a large pot over medium-high heat and brown the beef cubes on all sides, then remove and set aside.
- 2In the same pot, sauté onion and garlic until softened, about 3 minutes.
- 3Return beef to pot, add tomatoes, broth, cumin, salt, and pepper, then bring to a boil.
- 4Reduce heat and simmer covered for 45 minutes until beef is tender.
- 5Add potatoes and bell pepper, then simmer for 15 minutes.
- 6Stir in corn kernels and simmer for another 10 minutes until potatoes are tender.
- 7Taste and adjust seasonings, then serve hot in bowls.
