Carnitas
Slow-cooked pork shoulder in its own fat becomes tender, crispy, and incredibly flavorful.

Ingredients
- •3 lbs pork shoulder, cut into 2-inch chunks
- •2 tablespoons salt
- •1 tablespoon black pepper
- •1 tablespoon cumin
- •4 cloves garlic, minced
- •2 bay leaves
- •1 orange, halved
- •2 cups lard or vegetable oil
Directions
- 1Season pork chunks generously with salt, pepper, and cumin.
- 2Heat lard in a large heavy pot or Dutch oven over medium-high heat.
- 3Add pork in batches and brown on all sides, about 10 minutes total.
- 4Return all pork to pot, add garlic, bay leaves, and orange halves.
- 5Reduce heat to low, cover, and simmer for 2.5 to 3 hours until pork is very tender and shreds easily.
- 6Remove from heat and let pork cool slightly in the fat, then shred with two forks.
- 7Serve warm with tortillas, salsa, and your favorite toppings.
