Carrot Cake

- •2 cups all-purpose flour
- •2 teaspoons baking soda
- •1 teaspoon ground cinnamon
- •1/2 teaspoon ground nutmeg
- •3 cups shredded carrots
- •1 cup vegetable oil
- •2 cups granulated sugar
- •4 large eggs
- •8 ounces cream cheese, softened
- •1/2 cup butter, softened
- •2 cups powdered sugar
- •1 teaspoon vanilla extract
Directions
- 1Preheat oven to 350°F and grease two 9-inch round cake pans.
- 2Mix flour, baking soda, cinnamon, and nutmeg in a bowl.
- 3In a large bowl, whisk together oil, sugar, and eggs until combined, then fold in carrots and dry ingredients until just mixed.
- 4Divide batter evenly between prepared pans and bake for 30-35 minutes until a toothpick inserted in the center comes out clean.
- 5Cool cakes in pans for 10 minutes, then turn out onto wire racks to cool completely.
- 6Beat cream cheese, butter, powdered sugar, and vanilla extract until smooth and fluffy.
- 7Place one cake layer on a plate, spread frosting on top, add second layer, and frost the top and sides.
