Cassoulet

A hearty French bean and meat stew with crispy bread topping that's comfort food at its finest.

Ingredients

  • 1 pound dried white beans
  • 8 ounces duck confit or duck legs
  • 8 ounces pork sausage
  • 4 ounces bacon, diced
  • 1 medium onion, chopped
  • 4 cloves garlic, minced
  • 2 cups chicken broth
  • 1 teaspoon dried thyme
  • 2 bay leaves bay leaves
  • 1 cup breadcrumbs
  • to taste Salt and pepper

Directions

  1. 1Soak beans overnight in cold water, then drain and rinse.
  2. 2Boil beans for 45 minutes until partially tender, then drain.
  3. 3Brown bacon and sausage in a large pot, add onion and garlic, cook until fragrant.
  4. 4Add beans, duck, broth, thyme, and bay leaves to the pot; simmer 90 minutes until beans are tender.
  5. 5Transfer cassoulet to a baking dish, top with breadcrumbs and drizzle with fat from the meat.
  6. 6Bake at 350°F for 30-40 minutes until golden and crispy on top.
