Cassoulet
A hearty French bean and meat stew with crispy bread topping that's comfort food at its finest.

Ingredients
- •1 pound dried white beans
- •8 ounces duck confit or duck legs
- •8 ounces pork sausage
- •4 ounces bacon, diced
- •1 medium onion, chopped
- •4 cloves garlic, minced
- •2 cups chicken broth
- •1 teaspoon dried thyme
- •2 bay leaves bay leaves
- •1 cup breadcrumbs
- •to taste Salt and pepper
Directions
- 1Soak beans overnight in cold water, then drain and rinse.
- 2Boil beans for 45 minutes until partially tender, then drain.
- 3Brown bacon and sausage in a large pot, add onion and garlic, cook until fragrant.
- 4Add beans, duck, broth, thyme, and bay leaves to the pot; simmer 90 minutes until beans are tender.
- 5Transfer cassoulet to a baking dish, top with breadcrumbs and drizzle with fat from the meat.
- 6Bake at 350°F for 30-40 minutes until golden and crispy on top.
