Cauliflower Cheese
British cauliflower baked under a mustardy cheddar cheese sauce until bubbling and browned at the edges.

Ingredients
- •1 large head cauliflower, cut into florets
- •3 tbsp unsalted butter
- •3 tbsp all-purpose flour
- •2 cups whole milk
- •1 tsp Dijon mustard
- •2 cups cheddar cheese, shredded
- •3/4 tsp salt
- •1/4 tsp black pepper
Directions
- 1Boil the cauliflower florets for 5 minutes until barely tender, then drain them very thoroughly.
- 2Melt butter in a saucepan, whisk in flour, and cook for 1 minute.
- 3Gradually whisk in milk and simmer until the sauce thickens, about 4 minutes.
- 4Stir in Dijon mustard, half the cheddar, salt, and black pepper.
- 5Arrange cauliflower in a baking dish, pour over the sauce, and top with remaining cheddar.
- 6Bake at 425°F (220°C) for 18–20 minutes until bubbling and browned.
💡 Drain the cauliflower well before saucing; trapped water thins the cheese sauce and makes the finished dish watery.
