British cauliflower baked under a mustardy cheddar cheese sauce until bubbling and browned at the edges.

Ingredients

  • 1 large head cauliflower, cut into florets
  • 3 tbsp unsalted butter
  • 3 tbsp all-purpose flour
  • 2 cups whole milk
  • 1 tsp Dijon mustard
  • 2 cups cheddar cheese, shredded
  • 3/4 tsp salt
  • 1/4 tsp black pepper

Directions

  1. 1Boil the cauliflower florets for 5 minutes until barely tender, then drain them very thoroughly.
  2. 2Melt butter in a saucepan, whisk in flour, and cook for 1 minute.
  3. 3Gradually whisk in milk and simmer until the sauce thickens, about 4 minutes.
  4. 4Stir in Dijon mustard, half the cheddar, salt, and black pepper.
  5. 5Arrange cauliflower in a baking dish, pour over the sauce, and top with remaining cheddar.
  6. 6Bake at 425°F (220°C) for 18–20 minutes until bubbling and browned.

💡 Drain the cauliflower well before saucing; trapped water thins the cheese sauce and makes the finished dish watery.
