Cauliflower Gratin

Tender cauliflower baked in a mustardy cheese sauce beneath a golden breadcrumb crust.

Ingredients

  • 2 large heads cauliflower, cut into florets
  • 4 tbsp unsalted butter
  • 4 tbsp all-purpose flour
  • 3 cups whole milk
  • 1 tbsp Dijon mustard
  • 2 cups gruyère cheese, shredded
  • 1 cup breadcrumbs
  • 1 tsp salt
  • 1/4 tsp black pepper

Directions

  1. 1Heat the oven to 400°F (200°C).
  2. 2Blanch cauliflower for 4 minutes, then drain very well.
  3. 3Melt butter, whisk in flour, and cook for 1 minute.
  4. 4Whisk in milk and simmer until thick, then stir in mustard and half the Gruyère.
  5. 5Combine cauliflower and sauce in a baking dish.
  6. 6Top with remaining Gruyère and breadcrumbs and bake 20 minutes until bubbling and browned.

💡 Drain the cauliflower thoroughly after blanching so the sauce stays thick in the oven.
