Cauliflower Gratin
Tender cauliflower baked in a mustardy cheese sauce beneath a golden breadcrumb crust.

Ingredients
- •2 large heads cauliflower, cut into florets
- •4 tbsp unsalted butter
- •4 tbsp all-purpose flour
- •3 cups whole milk
- •1 tbsp Dijon mustard
- •2 cups gruyère cheese, shredded
- •1 cup breadcrumbs
- •1 tsp salt
- •1/4 tsp black pepper
Directions
- 1Heat the oven to 400°F (200°C).
- 2Blanch cauliflower for 4 minutes, then drain very well.
- 3Melt butter, whisk in flour, and cook for 1 minute.
- 4Whisk in milk and simmer until thick, then stir in mustard and half the Gruyère.
- 5Combine cauliflower and sauce in a baking dish.
- 6Top with remaining Gruyère and breadcrumbs and bake 20 minutes until bubbling and browned.
