Cauliflower Shawarma
Crispy roasted cauliflower seasoned with warm Middle Eastern spices and served in pita with tahini sauce and fresh vegetables.

Ingredients
- •1 large head cauliflower, cut into florets
- •3 tablespoons olive oil
- •2 teaspoons paprika
- •1.5 teaspoons cumin
- •1 teaspoon coriander
- •0.5 teaspoon cayenne pepper
- •0.5 teaspoon garlic powder
- •0.5 teaspoon salt
- •4 tablespoons tahini
- •2 tablespoons lemon juice
- •8 pieces pita bread
- •2 cups diced tomatoes and cucumbers
Directions
- 1Preheat oven to 425°F (220°C).
- 2Toss cauliflower florets with olive oil, paprika, cumin, coriander, cayenne, garlic powder, and salt until evenly coated.
- 3Spread on a baking sheet and roast for 25-30 minutes, stirring halfway through, until golden and crispy.
- 4Mix tahini with lemon juice and 2-3 tablespoons water to create a smooth sauce.
- 5Warm pita bread in the oven or on a skillet for 1-2 minutes.
- 6Assemble shawarmas by spreading tahini sauce on pita, adding roasted cauliflower, tomatoes, and cucumbers.
- 7Serve immediately with extra tahini sauce on the side.
