Cauliflower Shawarma

Crispy roasted cauliflower seasoned with warm Middle Eastern spices and served in pita with tahini sauce and fresh vegetables.

Ingredients

  • 1 large head cauliflower, cut into florets
  • 3 tablespoons olive oil
  • 2 teaspoons paprika
  • 1.5 teaspoons cumin
  • 1 teaspoon coriander
  • 0.5 teaspoon cayenne pepper
  • 0.5 teaspoon garlic powder
  • 0.5 teaspoon salt
  • 4 tablespoons tahini
  • 2 tablespoons lemon juice
  • 8 pieces pita bread
  • 2 cups diced tomatoes and cucumbers

Directions

  1. 1Preheat oven to 425°F (220°C).
  2. 2Toss cauliflower florets with olive oil, paprika, cumin, coriander, cayenne, garlic powder, and salt until evenly coated.
  3. 3Spread on a baking sheet and roast for 25-30 minutes, stirring halfway through, until golden and crispy.
  4. 4Mix tahini with lemon juice and 2-3 tablespoons water to create a smooth sauce.
  5. 5Warm pita bread in the oven or on a skillet for 1-2 minutes.
  6. 6Assemble shawarmas by spreading tahini sauce on pita, adding roasted cauliflower, tomatoes, and cucumbers.
  7. 7Serve immediately with extra tahini sauce on the side.
