Cazuela de Carne

A hearty Chilean beef and vegetable stew cooked slowly in a traditional earthenware dish until tender and flavorful.

Ingredients

  • 2 lbs beef chuck, cut into 1-inch cubes
  • 2 tablespoons vegetable oil
  • 1 large onion, diced
  • 4 cloves garlic, minced
  • 4 cups beef broth
  • 2 medium potatoes, cubed
  • 2 medium carrots, sliced
  • 1 cup corn kernels
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • to taste salt and black pepper

Directions

  1. 1Heat oil in a large cazuela or heavy pot over medium-high heat and brown the beef cubes on all sides, about 8 minutes total. Remove and set aside.
  2. 2In the same pot, sauté the onion until softened, about 5 minutes, then add garlic and cook for 1 minute more.
  3. 3Return beef to the pot and add beef broth, cumin, and paprika. Bring to a boil, then reduce heat and simmer covered for 30 minutes.
  4. 4Add potatoes and carrots, then continue simmering for 20 minutes until vegetables begin to soften.
  5. 5Stir in corn kernels and cook for another 10 minutes until all vegetables are tender and beef is very soft.
  6. 6Season with salt and black pepper to taste, then serve hot directly from the cazuela.
