Ingredients

  • 2 cups masa harina (corn flour)
  • 1.5 cups warm water
  • 1 teaspoon salt
  • 1 pound ground beef
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 2 cups shredded green cabbage
  • 0.5 cup crema or sour cream
  • 2 tablespoons lime juice
  • 2 teaspoons cumin
  • Oil for frying

Directions

  1. 1Mix masa harina, warm water, and salt until a soft dough forms, let rest 10 minutes.
  2. 2Brown ground beef in a skillet with onion and garlic, add cumin and salt to taste, cook 8 minutes.
  3. 3Divide masa into 8 balls and flatten between plastic wrap into thin ovals.
  4. 4Heat oil in a deep pan and fry each masa oval until golden, using a spoon to shape into a boat form while frying.
  5. 5Drain fried chacales on paper towels.
  6. 6Toss shredded cabbage with crema and lime juice to make slaw.
  7. 7Fill each chacale with seasoned ground beef and top generously with cabbage slaw.
