Chakalaka
A vibrant South African vegetable relish bursting with spices, peppers, and tomatoes that's perfect as a side dish or served with bread.

Ingredients
- •3 tablespoons vegetable oil
- •1 large onion, diced
- •3 cloves garlic, minced
- •2 bell peppers (red or yellow), diced
- •2 carrots, diced
- •1 can (400g) diced tomatoes
- •1 tablespoon tomato paste
- •2 teaspoons curry powder
- •1 teaspoon ground cumin
- •1/2 teaspoon chili powder
- •1 cup cabbage, shredded
- •to taste Salt and pepper
Directions
- 1Heat oil in a large pan over medium heat and sauté the diced onion until softened, about 3 minutes.
- 2Add minced garlic and cook for 1 minute until fragrant.
- 3Stir in the bell peppers and carrots, cooking for 5 minutes until slightly softened.
- 4Add tomato paste, curry powder, cumin, and chili powder, stirring well to coat the vegetables.
- 5Pour in the canned tomatoes with their juice and bring to a simmer.
- 6Add the shredded cabbage and stir to combine, then simmer for 10-12 minutes until all vegetables are tender.
- 7Season with salt and pepper to taste and serve hot alongside bread or rice.
