Ingredients

- •2 cups water
- •4 green onions, thinly sliced
- •1/2 cup fresh cilantro, chopped
- •4 eggs

- •4 slices rustic bread, toasted
Directions
- 1Combine milk, water, half the green onions, half the cilantro, and salt in a wide saucepan.
- 2Bring the mixture to a gentle simmer over medium heat without letting the milk boil hard.
- 3Crack each egg into a small cup and slide it carefully into the simmering broth.
- 4Poach the eggs for 3–4 minutes until the whites are set and the yolks remain soft.
- 5Divide toasted bread among bowls and ladle the milk broth and one egg over each serving.
- 6Finish with the remaining green onions and cilantro and serve immediately.
