Ingredients

  • 4 cups whole milk
  • 2 cups water
  • 4 green onions, thinly sliced
  • 1/2 cup fresh cilantro, chopped
  • 4 eggs
  • 1 tsp salt
  • 4 slices rustic bread, toasted

Directions

  1. 1Combine milk, water, half the green onions, half the cilantro, and salt in a wide saucepan.
  2. 2Bring the mixture to a gentle simmer over medium heat without letting the milk boil hard.
  3. 3Crack each egg into a small cup and slide it carefully into the simmering broth.
  4. 4Poach the eggs for 3–4 minutes until the whites are set and the yolks remain soft.
  5. 5Divide toasted bread among bowls and ladle the milk broth and one egg over each serving.
  6. 6Finish with the remaining green onions and cilantro and serve immediately.

💡 Keep the broth at a gentle simmer; a hard boil can split the milk and toughen the poached eggs.
