Charred Octopus with Lemon

Ingredients
- •2 lbs fresh octopus, cleaned
- •1/4 cup extra virgin olive oil
- •3 lemons
- •4 cloves garlic, minced
- •1/4 cup fresh parsley, chopped
- •2 tablespoons fresh oregano or dried oregano
- •1 teaspoon sea salt
- •1/2 teaspoon black pepper
- •1/2 teaspoon red pepper flakes
Directions
- 1Boil octopus in salted water for 35-40 minutes until tender, then drain and let cool slightly before cutting into pieces.
- 2Heat olive oil in a large cast iron skillet or grill pan over high heat until smoking.
- 3Season octopus pieces with salt, pepper, and red pepper flakes, then arrange in the hot pan in a single layer.
- 4Sear for 2-3 minutes per side until deeply charred, working in batches if necessary.
- 5Transfer charred octopus to a serving plate and drizzle with fresh lemon juice from 2 lemons.
- 6In a small bowl, whisk together minced garlic, remaining lemon juice, olive oil, oregano, and parsley.
- 7Pour the lemon-garlic dressing over the warm octopus and toss gently to combine, then serve immediately.
