Charred Octopus with Lemon

Ingredients

  • 2 lbs fresh octopus, cleaned
  • 1/4 cup extra virgin olive oil
  • 3 lemons
  • 4 cloves garlic, minced
  • 1/4 cup fresh parsley, chopped
  • 2 tablespoons fresh oregano or dried oregano
  • 1 teaspoon sea salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon red pepper flakes

Directions

  1. 1Boil octopus in salted water for 35-40 minutes until tender, then drain and let cool slightly before cutting into pieces.
  2. 2Heat olive oil in a large cast iron skillet or grill pan over high heat until smoking.
  3. 3Season octopus pieces with salt, pepper, and red pepper flakes, then arrange in the hot pan in a single layer.
  4. 4Sear for 2-3 minutes per side until deeply charred, working in batches if necessary.
  5. 5Transfer charred octopus to a serving plate and drizzle with fresh lemon juice from 2 lemons.
  6. 6In a small bowl, whisk together minced garlic, remaining lemon juice, olive oil, oregano, and parsley.
  7. 7Pour the lemon-garlic dressing over the warm octopus and toss gently to combine, then serve immediately.
