Ingredients
- •2 cups all-purpose flour
- •3/4 cup water
- •3/4 tsp salt
- •1 tbsp vegetable oil
- •4 tbsp niter kibbeh
- •1 1/2 tbsp berbere spice blend
Directions
- 1Mix flour, water, salt, and vegetable oil into a soft dough and knead for 3 minutes.
- 2Divide the dough into four balls and roll each into a thin 8-inch round.
- 3Cook the flatbreads in a dry skillet for 2–3 minutes per side until spotted and cooked through.
- 4Tear the warm flatbreads into rough bite-size pieces.
- 5Melt niter kibbeh in the skillet, stir in berbere, and cook 30 seconds until fragrant.
- 6Add the torn bread and toss over low heat for 2–3 minutes until every piece is evenly coated.
