Chechebsa (Ethiopian Spiced Flatbread Breakfast)

Ingredients

  • 2 cups all-purpose flour
  • 3/4 cup water
  • 3/4 tsp salt
  • 1 tbsp vegetable oil
  • 4 tbsp niter kibbeh
  • 1 1/2 tbsp berbere spice blend

Directions

  1. 1Mix flour, water, salt, and vegetable oil into a soft dough and knead for 3 minutes.
  2. 2Divide the dough into four balls and roll each into a thin 8-inch round.
  3. 3Cook the flatbreads in a dry skillet for 2–3 minutes per side until spotted and cooked through.
  4. 4Tear the warm flatbreads into rough bite-size pieces.
  5. 5Melt niter kibbeh in the skillet, stir in berbere, and cook 30 seconds until fragrant.
  6. 6Add the torn bread and toss over low heat for 2–3 minutes until every piece is evenly coated.
