Cheese and Chicken Quesadillas

Ingredients
- •2 cups shredded cooked chicken
- •8 flour tortillas (8-inch)
- •2 cups shredded cheddar cheese
- •1 bell pepper, diced
- •1/2 onion, diced
- •1 teaspoon cumin
- •1 teaspoon chili powder
- •2 tablespoons vegetable oil
- •to taste salt and pepper
Directions
- 1Heat 1 tablespoon of oil in a skillet over medium heat and sauté the diced onion and bell pepper for 3-4 minutes until softened.
- 2Add the shredded chicken to the skillet with cumin, chili powder, salt, and pepper; cook for 2 minutes until heated through.
- 3Place a tortilla in a clean skillet over medium heat and sprinkle 1/4 cup cheese on one half.
- 4Top the cheese with 2-3 tablespoons of the chicken mixture, then fold the tortilla in half.
- 5Cook for 2-3 minutes per side until golden and crispy, then transfer to a plate.
- 6Repeat with remaining tortillas, oil, cheese, and chicken mixture.
- 7Serve warm with sour cream, salsa, and guacamole.
