Ingredients

  • •1 cup all-purpose flour
  • •2 eggs
  • •1 cup milk
  • •1/4 teaspoon salt
  • •2 tablespoons melted butter
  • •1 pound farmer's cheese or ricotta
  • •2 tablespoons sugar
  • •1 egg yolk
  • •1/2 teaspoon vanilla extract
  • •butter for frying butter
  • •1 cup sour cream
  • •1/2 cup jam or preserves

Directions

  1. 1Mix flour, 2 eggs, milk, salt, and 2 tablespoons melted butter until smooth; let batter rest 15 minutes.
  2. 2Combine farmer's cheese, sugar, 1 egg yolk, and vanilla extract in a bowl for the filling.
  3. 3Heat a non-stick skillet and lightly butter it; pour thin batter and tilt pan to spread evenly, cooking until edges lift (about 1 minute per side).
  4. 4Place a spoonful of cheese filling in the center of each crêpe, fold in half, then fold in half again to form a triangle.
  5. 5Fry filled blintzes in butter over medium heat until golden brown on both sides, about 2 minutes per side.
  6. 6Serve warm topped with sour cream and jam.

💡 Chill cheese-blintz filling if it feels loose; cool cheese is easier to enclose and less likely to leak while the crêpes brown.
