Cheese Soufflé

Ingredients

  • 4 tablespoons butter
  • 3 tablespoons all-purpose flour
  • 1 cup whole milk
  • 1 cup grated Gruyère cheese
  • 4 eggs, separated
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon nutmeg

Directions

  1. 1Preheat oven to 375°F (190°C) and butter a 2-quart soufflé dish.
  2. 2Make a roux by melting 4 tablespoons butter over medium heat, whisk in flour, and cook for 1 minute until smooth.
  3. 3Gradually add milk while whisking constantly until the sauce thickens, then remove from heat and stir in cheese, salt, pepper, and nutmeg until melted.
  4. 4Whisk egg yolks one at a time into the cheese sauce, then let cool for 5 minutes.
  5. 5Beat egg whites in a separate bowl until stiff peaks form, then gently fold into the cheese mixture in three additions.
  6. 6Pour into the prepared soufflé dish and bake for 25-30 minutes until the top is golden brown and the center is just set.
  7. 7Serve immediately while the soufflé is still puffed and warm.
