Cheese Soufflé

Ingredients
- •4 tablespoons butter
- •3 tablespoons all-purpose flour
- •1 cup whole milk
- •1 cup grated Gruyère cheese
- •4 eggs, separated
- •1/2 teaspoon salt
- •1/4 teaspoon black pepper
- •1/4 teaspoon nutmeg
Directions
- 1Preheat oven to 375°F (190°C) and butter a 2-quart soufflé dish.
- 2Make a roux by melting 4 tablespoons butter over medium heat, whisk in flour, and cook for 1 minute until smooth.
- 3Gradually add milk while whisking constantly until the sauce thickens, then remove from heat and stir in cheese, salt, pepper, and nutmeg until melted.
- 4Whisk egg yolks one at a time into the cheese sauce, then let cool for 5 minutes.
- 5Beat egg whites in a separate bowl until stiff peaks form, then gently fold into the cheese mixture in three additions.
- 6Pour into the prepared soufflé dish and bake for 25-30 minutes until the top is golden brown and the center is just set.
- 7Serve immediately while the soufflé is still puffed and warm.
