Ingredients

  • •1 pound cheese tortellini (fresh or frozen)
  • •2 cans (14.5 oz each) crushed tomatoes
  • •3 cloves garlic, minced
  • •3 tablespoons olive oil
  • •1 teaspoon salt
  • •1/2 teaspoon black pepper
  • •1/2 teaspoon sugar
  • •1/4 cup fresh basil, chopped
  • •1/4 cup grated Parmesan cheese

Directions

  1. 1Bring a large pot of salted water to a boil and cook tortellini according to package directions; drain and set aside.
  2. 2Heat olive oil in a large skillet over medium heat and sauté minced garlic for 1 minute until fragrant.
  3. 3Add crushed tomatoes, salt, pepper, and sugar to the skillet and simmer for 8-10 minutes, stirring occasionally.
  4. 4Stir in fresh basil and cook for 1 additional minute.
  5. 5Add the cooked tortellini to the sauce and toss gently to coat.
  6. 6Divide into bowls and top with grated Parmesan cheese before serving.

💡 Tortellini needs less boiling than dried pasta. Stop while slightly firm because it finishes in the hot tomato-basil sauce.
