  • 1 lb ground beef, 85/15
  • 2 cups elbow macaroni, dry
  • 2 shallots, finely diced
  • 1 can (14 oz) diced tomatoes, with juices
  • 2 cups beef broth
  • 1.5 cups cheddar cheese, shredded
  • 1 tbsp barbecue sauce
  • 1 tsp garlic powder
  • 1 tsp smoked paprika

Directions

  1. 1Brown ground beef in a large deep skillet over medium-high heat, about 5 minutes; drain excess fat.
  2. 2Add shallots to skillet and cook 2 minutes until softened.
  3. 3Stir in garlic powder, smoked paprika, and barbecue sauce; coat the beef evenly.
  4. 4Pour in diced tomatoes and beef broth; bring to a boil.
  5. 5Add dry macaroni, stir well, then reduce heat to medium-low.
  6. 6Cover and simmer 12–14 minutes, stirring occasionally, until pasta is tender and liquid absorbed.
