Cheesy Scalloped Corn
A creamy, bubbly casserole of sweet corn, sharp cheddar, and a buttery cracker crust that somehow manages to be both humble and completely irresistible. A true Midwestern comfort classic.

Ingredients
- •4 cups frozen corn kernels, thawed
- •1 can (398 mL) cream-style canned corn
- •2 large eggs, beaten
- •1/2 cup sour cream
- •4 tbsp unsalted butter, melted
- •1.5 cups sharp cheddar cheese, shredded
- •1/2 tsp salt
- •1/4 tsp black pepper
- •1/4 tsp garlic powder
- •1 cup Ritz crackers, crushed
- •2 tbsp unsalted butter, melted (for topping)
Directions
- 1Preheat oven to 350°F and butter a 9×13-inch or similar 2-quart baking dish.
- 2In a large bowl, stir together thawed corn, cream-style corn, beaten eggs, sour cream, 4 tbsp melted butter, 1 cup of the shredded cheddar, salt, pepper, and garlic powder.
- 3Pour mixture into the prepared baking dish and smooth the top.
- 4Sprinkle remaining 1/2 cup cheddar evenly over the surface.
- 5Toss crushed crackers with 2 tbsp melted butter and scatter evenly over the cheese layer.
- 6Bake uncovered for 35–40 minutes until the top is golden and the centre is just set.
- 7Let rest 5 minutes before serving.
💡 Ritz crackers are sold at all Canadian grocery stores. For a slightly spicier version, stir 1 small can of diced green chiles and 1/2 tsp smoked paprika into the corn mixture.
