Chestnut and Pork Stew

A savory Chinese braise combining tender pork with sweet chestnuts in a rich, aromatic sauce.

Ingredients

  • 1.5 lbs pork shoulder, cubed
  • 1 cup roasted chestnuts
  • 3 tbsp soy sauce
  • 2 tbsp dark brown sugar
  • 2 tbsp vegetable oil
  • 4 slices ginger
  • 3 cloves garlic, minced
  • 2 star anise
  • 1 stick cinnamon
  • 2 cups chicken or pork broth
  • 2 dried shiitake mushrooms
  • 2 scallions, cut into pieces

Directions

  1. 1Heat oil in a large pot over medium-high heat and brown the pork cubes on all sides, about 8 minutes. Remove and set aside.
  2. 2In the same pot, sauté ginger and garlic until fragrant, about 1 minute.
  3. 3Return pork to the pot, add soy sauce, brown sugar, star anise, and cinnamon. Stir well.
  4. 4Pour in broth and add dried mushrooms. Bring to a boil, then reduce heat and simmer covered for 45 minutes.
  5. 5Add chestnuts and continue simmering for 20 more minutes until pork is very tender.
  6. 6Stir in scallions, adjust seasoning with soy sauce if needed, and serve hot over rice.
