Chestnut and Pork Stew
A savory Chinese braise combining tender pork with sweet chestnuts in a rich, aromatic sauce.

Ingredients
- •1.5 lbs pork shoulder, cubed
- •1 cup roasted chestnuts
- •3 tbsp soy sauce
- •2 tbsp dark brown sugar
- •2 tbsp vegetable oil
- •4 slices ginger
- •3 cloves garlic, minced
- •2 star anise
- •1 stick cinnamon
- •2 cups chicken or pork broth
- •2 dried shiitake mushrooms
- •2 scallions, cut into pieces
Directions
- 1Heat oil in a large pot over medium-high heat and brown the pork cubes on all sides, about 8 minutes. Remove and set aside.
- 2In the same pot, sauté ginger and garlic until fragrant, about 1 minute.
- 3Return pork to the pot, add soy sauce, brown sugar, star anise, and cinnamon. Stir well.
- 4Pour in broth and add dried mushrooms. Bring to a boil, then reduce heat and simmer covered for 45 minutes.
- 5Add chestnuts and continue simmering for 20 more minutes until pork is very tender.
- 6Stir in scallions, adjust seasoning with soy sauce if needed, and serve hot over rice.
