Cheung Fun with Shrimp (Cantonese Rice Noodle Rolls)
Cantonese steamed rice noodle sheets wrapped around shrimp and served with a light soy-sesame sauce.

Ingredients
- •1 cup rice flour
- •1/4 cup tapioca starch
- •2 1/2 cups water
- •2 tbsp vegetable oil
- •12 oz raw shrimp, peeled and chopped
- •3 green onions, finely sliced
- •3 tbsp soy sauce
- •1 tsp sesame oil
- •1 tsp granulated sugar
Directions
- 1Whisk rice flour, tapioca starch, water, and 1 tablespoon vegetable oil into a thin batter.
- 2Mix shrimp with half the green onions.
- 3Pour a thin layer of batter into an oiled steaming tray and steam for 2 minutes.
- 4Scatter shrimp over the sheet and steam 2 minutes more until opaque.
- 5Roll the noodle sheet around the shrimp and repeat with the remaining batter.
- 6Mix soy sauce, sesame oil, sugar, and remaining green onions and spoon over the rolls.
