Cheung Fun with Shrimp (Cantonese Rice Noodle Rolls)

Cantonese steamed rice noodle sheets wrapped around shrimp and served with a light soy-sesame sauce.

Ingredients

  • 1 cup rice flour
  • 1/4 cup tapioca starch
  • 2 1/2 cups water
  • 2 tbsp vegetable oil
  • 12 oz raw shrimp, peeled and chopped
  • 3 green onions, finely sliced
  • 3 tbsp soy sauce
  • 1 tsp sesame oil
  • 1 tsp granulated sugar

Directions

  1. 1Whisk rice flour, tapioca starch, water, and 1 tablespoon vegetable oil into a thin batter.
  2. 2Mix shrimp with half the green onions.
  3. 3Pour a thin layer of batter into an oiled steaming tray and steam for 2 minutes.
  4. 4Scatter shrimp over the sheet and steam 2 minutes more until opaque.
  5. 5Roll the noodle sheet around the shrimp and repeat with the remaining batter.
  6. 6Mix soy sauce, sesame oil, sugar, and remaining green onions and spoon over the rolls.
