Chicken and Bok Choy Stir-Fry

Ingredients

  • 1 lb boneless chicken breast, sliced thin
  • 1 lb bok choy, chopped
  • 3 cloves garlic, minced
  • 1 tbsp fresh ginger, minced
  • 3 tbsp soy sauce
  • 1 tbsp sesame oil
  • 2 tbsp vegetable oil
  • 1/2 cup chicken broth
  • 1 tsp cornstarch
  • 2 green onions, sliced
  • 1 tsp white pepper

Directions

  1. 1Mix soy sauce, sesame oil, chicken broth, and cornstarch in a small bowl and set aside.
  2. 2Heat 1 tbsp vegetable oil in a large wok or skillet over high heat. Add chicken and stir-fry until cooked through, about 5-6 minutes. Transfer to a plate.
  3. 3Add remaining 1 tbsp oil to the wok, then add minced garlic and ginger, stirring for 30 seconds until fragrant.
  4. 4Add chopped bok choy and stir-fry for 3-4 minutes until tender-crisp.
  5. 5Return chicken to the wok and pour in the sauce mixture, stirring constantly for 1-2 minutes until sauce thickens.
  6. 6Season with white pepper and garnish with green onions. Serve immediately over steamed rice.
