Chicken and Mushroom Panini

A warm, crispy sandwich with tender chicken, sautéed mushrooms, melted cheese, and herbs pressed between toasted bread.

Ingredients

  • 2 chicken breasts, pounded thin
  • 8 oz mushrooms, sliced
  • 2 tbsp butter
  • 2 cloves garlic, minced
  • 4 slices provolone cheese
  • 4 slices ciabatta or panini bread
  • 2 tbsp olive oil
  • 1 tsp Italian seasoning
  • to taste Salt and pepper

Directions

  1. 1Season chicken breasts with salt, pepper, and Italian seasoning. Heat 1 tbsp butter in a skillet and cook chicken for 6-7 minutes per side until golden and cooked through. Remove and slice.
  2. 2In the same skillet, melt remaining butter and sauté sliced mushrooms with garlic for 4-5 minutes until golden and tender. Season with salt and pepper.
  3. 3Assemble paninis: place chicken and mushroom mixture on one slice of bread, top with cheese and another bread slice.
  4. 4Brush the outside of each sandwich lightly with olive oil.
  5. 5Preheat a panini press or skillet to medium-high heat. Cook sandwiches for 3-4 minutes per side until bread is crispy and golden and cheese is melted.
  6. 6Remove from heat, let cool for 1 minute, and serve immediately.
