Chicken and Mushroom Panini
A warm, crispy sandwich with tender chicken, sautéed mushrooms, melted cheese, and herbs pressed between toasted bread.

Ingredients
- •2 chicken breasts, pounded thin
- •8 oz mushrooms, sliced
- •2 tbsp butter
- •2 cloves garlic, minced
- •4 slices provolone cheese
- •4 slices ciabatta or panini bread
- •2 tbsp olive oil
- •1 tsp Italian seasoning
- •to taste Salt and pepper
Directions
- 1Season chicken breasts with salt, pepper, and Italian seasoning. Heat 1 tbsp butter in a skillet and cook chicken for 6-7 minutes per side until golden and cooked through. Remove and slice.
- 2In the same skillet, melt remaining butter and sauté sliced mushrooms with garlic for 4-5 minutes until golden and tender. Season with salt and pepper.
- 3Assemble paninis: place chicken and mushroom mixture on one slice of bread, top with cheese and another bread slice.
- 4Brush the outside of each sandwich lightly with olive oil.
- 5Preheat a panini press or skillet to medium-high heat. Cook sandwiches for 3-4 minutes per side until bread is crispy and golden and cheese is melted.
- 6Remove from heat, let cool for 1 minute, and serve immediately.
