Chicken Cacciatore

Tender chicken braised in a rustic tomato sauce with bell peppers, onions, and olives for an authentic Italian hunter's-style dinner.

Ingredients

  • 2 lbs chicken thighs and drumsticks
  • 2 tablespoons olive oil
  • 1 medium yellow onion, sliced
  • 1 red bell pepper, sliced
  • 1 green bell pepper, sliced
  • 4 cloves garlic, minced
  • 1 can (28 oz) crushed tomatoes
  • 1/2 cup Kalamata olives
  • 1/2 cup dry white wine
  • 1 teaspoon dried oregano
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Directions

  1. 1Heat olive oil in a large skillet over medium-high heat and brown chicken pieces on all sides, about 8 minutes total. Remove and set aside.
  2. 2In the same skillet, sauté onion and garlic for 3 minutes until fragrant, then add bell peppers and cook 2 more minutes.
  3. 3Pour in white wine and scrape up any browned bits from the bottom of the pan, then add crushed tomatoes, olives, oregano, salt, and pepper.
  4. 4Return chicken to the skillet, nestling it into the sauce. Reduce heat to medium-low, cover, and simmer for 30 minutes until chicken is cooked through.
  5. 5Serve hot over pasta or with crusty bread to soak up the sauce.
