Chicken Cacciatore
Tender chicken braised in a rustic tomato sauce with bell peppers, onions, and olives for an authentic Italian hunter's-style dinner.

Ingredients
- •2 lbs chicken thighs and drumsticks
- •2 tablespoons olive oil
- •1 medium yellow onion, sliced
- •1 red bell pepper, sliced
- •1 green bell pepper, sliced
- •4 cloves garlic, minced
- •1 can (28 oz) crushed tomatoes
- •1/2 cup Kalamata olives
- •1/2 cup dry white wine
- •1 teaspoon dried oregano
- •1 teaspoon salt
- •1/2 teaspoon black pepper
Directions
- 1Heat olive oil in a large skillet over medium-high heat and brown chicken pieces on all sides, about 8 minutes total. Remove and set aside.
- 2In the same skillet, sauté onion and garlic for 3 minutes until fragrant, then add bell peppers and cook 2 more minutes.
- 3Pour in white wine and scrape up any browned bits from the bottom of the pan, then add crushed tomatoes, olives, oregano, salt, and pepper.
- 4Return chicken to the skillet, nestling it into the sauce. Reduce heat to medium-low, cover, and simmer for 30 minutes until chicken is cooked through.
- 5Serve hot over pasta or with crusty bread to soak up the sauce.
