Chicken Cacciatore Sheet Pan

Ingredients

  • 8 bone-in chicken thighs
  • 2 tablespoons olive oil
  • 1 large yellow onion, sliced
  • 1 red bell pepper, sliced
  • 1 green bell pepper, sliced
  • 8 ounces mushrooms, sliced
  • 1 can (28 ounces) crushed tomatoes
  • 1/2 cup pitted kalamata olives
  • 4 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Directions

  1. 1Preheat oven to 400°F. Spread chicken thighs on a large sheet pan and drizzle with olive oil, salt, and pepper. Roast for 15 minutes.
  2. 2Remove pan from oven and push chicken to the sides. Add onion, bell peppers, and mushrooms to the center.
  3. 3In a bowl, combine crushed tomatoes, minced garlic, oregano, olives, salt, and pepper. Pour sauce over vegetables and around chicken.
  4. 4Return sheet pan to oven and bake for 25-30 minutes until chicken reaches 165°F internal temperature and vegetables are tender.
  5. 5Remove from oven, let rest for 5 minutes, and serve directly from the sheet pan with crusty bread or over pasta.
