Chicken Cacciatore Sheet Pan
Tender chicken thighs braised with tomatoes, peppers, and olives in a rustic Italian hunter-style sauce.

Ingredients
- •8 bone-in chicken thighs
- •2 tablespoons olive oil
- •1 large yellow onion, sliced
- •1 red bell pepper, sliced
- •1 green bell pepper, sliced
- •8 ounces mushrooms, sliced
- •1 can (28 ounces) crushed tomatoes
- •1/2 cup pitted kalamata olives
- •4 cloves garlic, minced
- •1 teaspoon dried oregano
- •1/2 teaspoon salt
- •1/4 teaspoon black pepper
Directions
- 1Preheat oven to 400°F. Spread chicken thighs on a large sheet pan and drizzle with olive oil, salt, and pepper. Roast for 15 minutes.
- 2Remove pan from oven and push chicken to the sides. Add onion, bell peppers, and mushrooms to the center.
- 3In a bowl, combine crushed tomatoes, minced garlic, oregano, olives, salt, and pepper. Pour sauce over vegetables and around chicken.
- 4Return sheet pan to oven and bake for 25-30 minutes until chicken reaches 165°F internal temperature and vegetables are tender.
- 5Remove from oven, let rest for 5 minutes, and serve directly from the sheet pan with crusty bread or over pasta.
