Ingredients

  • 2 lbs chicken feet, cleaned and blanched
  • 3 tablespoons fermented black beans, rinsed
  • 6 cloves garlic, minced
  • 2 tablespoons fresh ginger, minced
  • 3 tablespoons soy sauce
  • 1 tablespoon oyster sauce
  • 1 teaspoon sugar
  • 2 tablespoons vegetable oil
  • 1 cup chicken stock
  • 2 dried red chilies
  • 3 green onions, sliced

Directions

  1. 1Heat oil in a wok or large pan over high heat. Add minced garlic and ginger, stir-fry for 30 seconds until fragrant.
  2. 2Add rinsed fermented black beans and dried chilies, stir-fry for 1 minute to release flavors.
  3. 3Add blanched chicken feet and stir-fry for 2-3 minutes until lightly caramelized.
  4. 4Pour in soy sauce, oyster sauce, sugar, and chicken stock. Stir well to combine.
  5. 5Bring to a boil, then reduce heat to medium-low and simmer covered for 25-30 minutes until chicken feet are very tender.
  6. 6Uncover and simmer for 3-5 minutes more if needed to reduce sauce slightly and concentrate flavors.
  7. 7Garnish with sliced green onions and serve hot over steamed rice.
