Chicken Feet in Black Bean Sauce

Ingredients
- •2 lbs chicken feet, cleaned and blanched
- •3 tablespoons fermented black beans, rinsed
- •6 cloves garlic, minced
- •2 tablespoons fresh ginger, minced
- •3 tablespoons soy sauce
- •1 tablespoon oyster sauce
- •1 teaspoon sugar
- •2 tablespoons vegetable oil
- •1 cup chicken stock
- •2 dried red chilies
- •3 green onions, sliced
Directions
- 1Heat oil in a wok or large pan over high heat. Add minced garlic and ginger, stir-fry for 30 seconds until fragrant.
- 2Add rinsed fermented black beans and dried chilies, stir-fry for 1 minute to release flavors.
- 3Add blanched chicken feet and stir-fry for 2-3 minutes until lightly caramelized.
- 4Pour in soy sauce, oyster sauce, sugar, and chicken stock. Stir well to combine.
- 5Bring to a boil, then reduce heat to medium-low and simmer covered for 25-30 minutes until chicken feet are very tender.
- 6Uncover and simmer for 3-5 minutes more if needed to reduce sauce slightly and concentrate flavors.
- 7Garnish with sliced green onions and serve hot over steamed rice.
