Ingredients

  • •3 cups cooked rice, cooled
  • •2 cups diced cooked chicken
  • •3 eggs, beaten
  • •1 cup frozen mixed vegetables (peas, carrots, corn)
  • •3 cloves garlic, minced
  • •3 tablespoons soy sauce
  • •2 tablespoons vegetable oil
  • •1 teaspoon sesame oil
  • •4 green onions, chopped
  • •1 teaspoon ginger, minced

Directions

  1. 1Heat 1 tablespoon of vegetable oil in a large wok or skillet over medium-high heat and scramble the eggs until cooked through, then remove and set aside.
  2. 2Add the remaining oil to the wok and stir-fry the garlic and ginger for 30 seconds until fragrant.
  3. 3Add the diced chicken and frozen vegetables, stir-frying for 2-3 minutes until heated through.
  4. 4Add the cooled rice, breaking up any clumps, and stir-fry for 3-4 minutes until the rice is heated and lightly browned.
  5. 5Return the eggs to the wok, pour in the soy sauce and sesame oil, and toss everything together for 1-2 minutes.
  6. 6Garnish with chopped green onions and serve hot.

💡 Cold rice is crucial for chicken fried rice. Break apart clumps before heating so you can fry the grains instead of steaming them apart in the wok.
