Chicken Gumbo

Ingredients

  • 3 tablespoons vegetable oil
  • 3 tablespoons all-purpose flour
  • 1 pound chicken breast, cubed
  • 1 medium onion, diced
  • 2 stalks celery, diced
  • 1 medium bell pepper, diced
  • 6 cups chicken broth
  • 1.5 cups fresh okra, sliced
  • 1 can (14.5 oz) diced tomatoes
  • 2 cloves garlic, minced
  • 1 teaspoon dried thyme

Directions

  1. 1Heat oil in a large pot over medium heat and whisk in flour to create a dark roux, stirring constantly for 8-10 minutes until it reaches a deep chocolate color.
  2. 2Add diced onion, celery, and bell pepper to the roux and sauté for 5 minutes until softened.
  3. 3Stir in minced garlic and cook for 1 minute, then add chicken pieces and cook until no longer pink on the outside, about 3 minutes.
  4. 4Pour in chicken broth and add diced tomatoes with their juice and dried thyme, bringing to a boil then reducing to a simmer.
  5. 5Simmer for 20 minutes, then add sliced okra and continue simmering for 10 more minutes until okra is tender and chicken is cooked through.
  6. 6Season with salt and pepper to taste and serve hot over rice if desired.
