Chicken Gumbo

Ingredients
- •3 tablespoons vegetable oil
- •3 tablespoons all-purpose flour
- •1 pound chicken breast, cubed
- •1 medium onion, diced
- •2 stalks celery, diced
- •1 medium bell pepper, diced
- •6 cups chicken broth
- •1.5 cups fresh okra, sliced
- •1 can (14.5 oz) diced tomatoes
- •2 cloves garlic, minced
- •1 teaspoon dried thyme

Directions
- 1Heat oil in a large pot over medium heat and whisk in flour to create a dark roux, stirring constantly for 8-10 minutes until it reaches a deep chocolate color.
- 2Add diced onion, celery, and bell pepper to the roux and sauté for 5 minutes until softened.
- 3Stir in minced garlic and cook for 1 minute, then add chicken pieces and cook until no longer pink on the outside, about 3 minutes.
- 4Pour in chicken broth and add diced tomatoes with their juice and dried thyme, bringing to a boil then reducing to a simmer.
- 5Simmer for 20 minutes, then add sliced okra and continue simmering for 10 more minutes until okra is tender and chicken is cooked through.
- 6Season with salt and pepper to taste and serve hot over rice if desired.
