Chicken Korma

Ingredients

  • 2 lbs boneless chicken breast, cut into bite-sized pieces
  • 2 tablespoons vegetable oil
  • 1 large onion, finely diced
  • 3 cloves garlic, minced
  • 1 tablespoon ginger, minced
  • 2 tablespoons korma paste or curry powder
  • 1 cup coconut milk
  • 1/2 cup chicken broth
  • 1/4 cup plain yogurt
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Directions

  1. 1Heat oil in a large pan over medium-high heat and sauté the diced onion for 3-4 minutes until soft and translucent.
  2. 2Add minced garlic and ginger, cook for 1 minute until fragrant, then stir in the korma paste and cook for another minute.
  3. 3Add the chicken pieces and cook for 5 minutes, stirring occasionally, until the outside is lightly browned.
  4. 4Pour in the coconut milk and chicken broth, then bring to a simmer and cook uncovered for 15-20 minutes until the chicken is cooked through.
  5. 5Reduce heat to low and stir in the yogurt, salt, and pepper until well combined and creamy.
  6. 6Simmer for another 5 minutes without boiling, then taste and adjust seasoning as needed.
