Chicken Pastitsada

A Corfiot classic featuring tender chicken braised in a rich tomato and wine sauce, traditionally served over pasta or rice.

Ingredients

  • 1.5 kg chicken, cut into pieces
  • 3 tablespoons olive oil
  • 1 large onion, finely chopped
  • 4 cloves garlic, minced
  • 1 cup red wine
  • 800 g crushed tomatoes
  • 2 tablespoons tomato paste
  • 1 teaspoon dried oregano
  • 2 bay leaves
  • 1 stick cinnamon
  • to taste salt and pepper
  • 500 g pasta or rice for serving

Directions

  1. 1Heat olive oil in a large pot over medium-high heat and brown the chicken pieces on all sides, then remove and set aside.
  2. 2In the same pot, sauté the chopped onion until softened, then add garlic and cook for 1 minute.
  3. 3Deglaze the pot with red wine, scraping up any browned bits, and let it reduce by half.
  4. 4Add the crushed tomatoes, tomato paste, oregano, bay leaves, and cinnamon stick; stir well.
  5. 5Return the chicken to the pot, season with salt and pepper, and bring to a simmer.
  6. 6Cover and simmer for 50-60 minutes until the chicken is tender and the sauce has thickened.
  7. 7Remove the bay leaves and cinnamon stick, taste and adjust seasonings.
  8. 8Serve the chicken pastitsada over hot pasta or rice, spooning the rich sauce over the top.
