Chicken Pastitsada
A Corfiot classic featuring tender chicken braised in a rich tomato and wine sauce, traditionally served over pasta or rice.

Ingredients
- •1.5 kg chicken, cut into pieces
- •3 tablespoons olive oil
- •1 large onion, finely chopped
- •4 cloves garlic, minced
- •1 cup red wine
- •800 g crushed tomatoes
- •2 tablespoons tomato paste
- •1 teaspoon dried oregano
- •2 bay leaves
- •1 stick cinnamon
- •to taste salt and pepper
- •500 g pasta or rice for serving
Directions
- 1Heat olive oil in a large pot over medium-high heat and brown the chicken pieces on all sides, then remove and set aside.
- 2In the same pot, sauté the chopped onion until softened, then add garlic and cook for 1 minute.
- 3Deglaze the pot with red wine, scraping up any browned bits, and let it reduce by half.
- 4Add the crushed tomatoes, tomato paste, oregano, bay leaves, and cinnamon stick; stir well.
- 5Return the chicken to the pot, season with salt and pepper, and bring to a simmer.
- 6Cover and simmer for 50-60 minutes until the chicken is tender and the sauce has thickened.
- 7Remove the bay leaves and cinnamon stick, taste and adjust seasonings.
- 8Serve the chicken pastitsada over hot pasta or rice, spooning the rich sauce over the top.
