Ingredients

  • •1 pound chicken breasts
  • •1 pound pasta
  • •2 cups fresh basil leaves
  • •1/2 cup pine nuts
  • •3 cloves garlic
  • •1/2 cup olive oil
  • •1/2 cup parmesan cheese, grated
  • •1 cup cherry tomatoes, halved
  • •2 tablespoons lemon juice
  • •to taste salt and pepper

Directions

  1. 1Cook pasta according to package directions; drain and set aside.
  2. 2Season chicken breasts with salt and pepper, then pan-fry over medium-high heat for 6-7 minutes per side until golden and cooked through; slice into strips.
  3. 3Blend basil, pine nuts, garlic, olive oil, parmesan, and lemon juice in a food processor until smooth.
  4. 4Toss cooked pasta with pesto sauce, then fold in sliced chicken and cherry tomatoes.
  5. 5Adjust seasoning with salt and pepper, then serve immediately.

💡 Add pesto to hot pasta after the pan leaves direct heat; prolonged cooking darkens basil and separates Parmesan into oil.
