Chicken Piccata

Ingredients
- •4 boneless, skinless chicken breasts
- •1/2 cup all-purpose flour
- •1/2 teaspoon salt
- •1/4 teaspoon black pepper
- •3 tablespoons olive oil
- •1/2 cup chicken broth
- •1/4 cup fresh lemon juice
- •2 tablespoons capers, drained
- •2 cloves garlic, minced
- •2 tablespoons butter
Directions
- 1Pound chicken breasts to 1/2-inch thickness. Mix flour, salt, and pepper in a shallow dish, then dredge chicken on both sides.
- 2Heat olive oil in a large skillet over medium-high heat. Sear chicken 6-7 minutes per side until golden, then transfer to a plate.
- 3In the same skillet, add minced garlic and cook for 30 seconds until fragrant.
- 4Pour in chicken broth and lemon juice, stirring to combine. Add capers and return chicken to the skillet.
- 5Reduce heat to medium-low and simmer for 2-3 minutes. Remove from heat and stir in butter until melted.
- 6Serve chicken with sauce spooned over the top.
