Chicken Piccata

Tender chicken breasts pan-seared until golden, then finished in a bright and tangy lemon-caper sauce.

Ingredients

  • 4 boneless, skinless chicken breasts
  • 1/2 cup all-purpose flour
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 3 tablespoons olive oil
  • 1/2 cup chicken broth
  • 1/4 cup fresh lemon juice
  • 2 tablespoons capers, drained
  • 2 cloves garlic, minced
  • 2 tablespoons butter

Directions

  1. 1Pound chicken breasts to 1/2-inch thickness. Mix flour, salt, and pepper in a shallow dish, then dredge chicken on both sides.
  2. 2Heat olive oil in a large skillet over medium-high heat. Sear chicken 6-7 minutes per side until golden, then transfer to a plate.
  3. 3In the same skillet, add minced garlic and cook for 30 seconds until fragrant.
  4. 4Pour in chicken broth and lemon juice, stirring to combine. Add capers and return chicken to the skillet.
  5. 5Reduce heat to medium-low and simmer for 2-3 minutes. Remove from heat and stir in butter until melted.
  6. 6Serve chicken with sauce spooned over the top.
