Ingredients

  • 1 pound boneless, skinless chicken breasts
  • 1/2 cup all-purpose flour
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 3 tablespoons olive oil
  • 1 cup chicken broth
  • 3 tablespoons fresh lemon juice
  • 3 tablespoons capers
  • 2 cloves garlic, minced
  • 1 pound whole wheat pasta
  • 2 tablespoons fresh parsley, chopped

Directions

  1. 1Cook whole wheat pasta according to package directions; drain and set aside.
  2. 2Pound chicken breasts to even thickness, then dredge in flour mixed with salt and pepper.
  3. 3Heat olive oil in a large skillet over medium-high heat and cook chicken for 5-6 minutes per side until golden; remove and set aside.
  4. 4In the same skillet, sauté garlic for 30 seconds, then add chicken broth, lemon juice, and capers; simmer for 2 minutes.
  5. 5Return chicken to the skillet and simmer for 2-3 minutes until sauce thickens slightly.
  6. 6Divide pasta among plates, top with chicken and sauce, and garnish with fresh parsley.
