Chicken Piccata with Whole Wheat Pasta

- •1 pound boneless, skinless chicken breasts
- •1/2 cup all-purpose flour
- •1/2 teaspoon salt
- •1/4 teaspoon black pepper
- •3 tablespoons olive oil
- •1 cup chicken broth
- •3 tablespoons fresh lemon juice
- •3 tablespoons capers
- •2 cloves garlic, minced
- •1 pound whole wheat pasta
- •2 tablespoons fresh parsley, chopped
Directions
- 1Cook whole wheat pasta according to package directions; drain and set aside.
- 2Pound chicken breasts to even thickness, then dredge in flour mixed with salt and pepper.
- 3Heat olive oil in a large skillet over medium-high heat and cook chicken for 5-6 minutes per side until golden; remove and set aside.
- 4In the same skillet, sauté garlic for 30 seconds, then add chicken broth, lemon juice, and capers; simmer for 2 minutes.
- 5Return chicken to the skillet and simmer for 2-3 minutes until sauce thickens slightly.
- 6Divide pasta among plates, top with chicken and sauce, and garnish with fresh parsley.
