Chicken Pot Pie

Ingredients
- •3 tablespoons butter
- •1 medium onion, diced
- •2 cloves garlic, minced
- •3 tablespoons all-purpose flour
- •2 cups chicken broth
- •1 cup heavy cream
- •3 cups cooked chicken, cubed
- •1 cup frozen peas and carrots
- •1 teaspoon dried thyme
- •1 pie crust (store-bought or homemade)

Directions
- 1Preheat oven to 400°F. Melt butter in a large skillet and sauté onion and garlic until softened, about 3 minutes.
- 2Stir in flour and cook for 1 minute to create a roux, then gradually add broth and cream, stirring constantly until thickened.
- 3Add cooked chicken, frozen vegetables, thyme, salt, and pepper. Simmer for 5 minutes.
- 4Pour the mixture into a 9-inch pie dish and top with the pie crust, sealing edges and making a small slit in the center.
- 5Bake for 25-30 minutes until the crust is golden brown. Let cool for 5 minutes before serving.
