Ingredients

  • 3 tablespoons butter
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 3 tablespoons all-purpose flour
  • 2 cups chicken broth
  • 1 cup heavy cream
  • 3 cups cooked chicken, cubed
  • 1 cup frozen peas and carrots
  • 1 teaspoon dried thyme
  • 1 pie crust (store-bought or homemade)

Directions

  1. 1Preheat oven to 400°F. Melt butter in a large skillet and sauté onion and garlic until softened, about 3 minutes.
  2. 2Stir in flour and cook for 1 minute to create a roux, then gradually add broth and cream, stirring constantly until thickened.
  3. 3Add cooked chicken, frozen vegetables, thyme, salt, and pepper. Simmer for 5 minutes.
  4. 4Pour the mixture into a 9-inch pie dish and top with the pie crust, sealing edges and making a small slit in the center.
  5. 5Bake for 25-30 minutes until the crust is golden brown. Let cool for 5 minutes before serving.
