Chicken Stir-Fry with Bell Peppers and Brown Rice

Ingredients
- •1.5 cups brown rice
- •1.5 lbs boneless, skinless chicken breast, sliced into strips
- •1 red bell pepper sliced into strips
- •1 yellow bell pepper sliced into strips
- •1 cup broccoli florets
- •3 tablespoons soy sauce
- •1 tablespoon fresh ginger, minced
- •3 cloves garlic, minced
- •2 tablespoons vegetable oil
- •1 teaspoon sesame oil
- •2 green onions sliced
Directions
- 1Cook brown rice according to package directions; set aside.
- 2Heat 1 tablespoon of vegetable oil in a large wok or skillet over medium-high heat and cook chicken strips until golden and cooked through, about 6-8 minutes; remove and set aside.
- 3Add remaining oil to the pan, then stir-fry bell peppers and broccoli for 3-4 minutes until crisp-tender.
- 4Return chicken to the pan and add soy sauce, ginger, and garlic; stir-fry for 2 minutes until heated through.
- 5Drizzle with sesame oil and toss to combine.
- 6Serve stir-fry over brown rice and garnish with green onions.
