Chicken Stir-Fry with Bell Peppers and Brown Rice

Ingredients

  • 1.5 cups brown rice
  • 1.5 lbs boneless, skinless chicken breast, sliced into strips
  • 1 red bell pepper sliced into strips
  • 1 yellow bell pepper sliced into strips
  • 1 cup broccoli florets
  • 3 tablespoons soy sauce
  • 1 tablespoon fresh ginger, minced
  • 3 cloves garlic, minced
  • 2 tablespoons vegetable oil
  • 1 teaspoon sesame oil
  • 2 green onions sliced

Directions

  1. 1Cook brown rice according to package directions; set aside.
  2. 2Heat 1 tablespoon of vegetable oil in a large wok or skillet over medium-high heat and cook chicken strips until golden and cooked through, about 6-8 minutes; remove and set aside.
  3. 3Add remaining oil to the pan, then stir-fry bell peppers and broccoli for 3-4 minutes until crisp-tender.
  4. 4Return chicken to the pan and add soy sauce, ginger, and garlic; stir-fry for 2 minutes until heated through.
  5. 5Drizzle with sesame oil and toss to combine.
  6. 6Serve stir-fry over brown rice and garnish with green onions.
